Ligurian-style rabbit is a delicious second course rich in intense flavors and aromas.
As the title suggests, this rabbit recipe originated in Liguria, but from there it has become extremely famous for its spectacular flavor.
This recipe's defining feature is the use of some very interesting ingredients, such as pine nuts, Taggiasca olives, onion, sage, and thyme.
It goes without saying that this is a dish rich in incredible aromas and unique textures; I also recommend using an excellent extra virgin olive oil to further enhance the flavor of this dish.

The presence of wine helps rabbit meat lose its somewhat gamy flavor; you often ask me how to cook rabbit, and I must say this recipe really intrigues me, so I'm happy to share it with you!

You can serve this rustic dish with simple baked potatoes: this combination is always a great choice!

► Ingredients for Ligurian-style rabbit:
1.5 kg rabbit
150 g onions
100 g pitted olives
120 g red wine
20 g pine nuts
2 cloves garlic
4 sprigs thyme
2 sprigs rosemary
2 sprigs marjoram
Meat broth to taste
4 tablespoons extra virgin olive oil
Salt to taste
Black pepper to taste
