A manifold is a second-countable Hausdorff space that's locally Euclidean. In this video, we show off the "locally Euclidean" part of that definition by taking parts of the surface of the Earth (which satisfies the "locally" part of "locally Euclidean") and showing that we can flatten them out (which satisfies the "Euclidean" part of "locally Euclidean").

This video took hours to render and about as long to make because I had to place all the discs manually and generate the textures using the drawing app I've been working on by taking a uv-mapped texture, converting it to spherical coordinates, rotating the sphere, and then converting back to a uv-mapped disk.
