In the older versions of Android and MIUI, there was an option to lock apps directly in the recent menu, but recent updates have removed this feature from the recent menu. However, you can still lock recent apps using the following method:
Swipe and open the 'Security' app on your device, or you can search for the 'Security' app from your app drawer.
Once the 'Security' app is open, click on the settings icon at the top right corner.
Scroll down and click on 'Boost Speed.'
A new menu will appear; from there, click on 'Lock Apps.'
You will see a list of apps. Turn on the toggle switch in front of the apps you want to lock or always run.
