Chicken pot pie is a favorite amongst recipes for senior citizens- a favorite homestyle dish for people of any age, really! There are many recipe variations for chicken pot pie that range from baking them to cooking them in a slow cooker kitchen appliance.

Though the recipe for chicken pot pie has a significant number of ingredients it is really not that complicated to actually make. This is one recipe for anyone who sick of frozen dinners night after night and wants to get back in the kitchen again.

Ingredients to prepare recipe for senior citizens:
1 pound of boneless and skinless chicken half-breasts, cubed
1 cup of carrots, sliced
1 cup of green peas, frozen
1/2 of a cup of celery, sliced
1/3 of a cup of butter
1/3 of a cup of onion, chopped
1/3 of a cup of flour
1/2 tsp of kosher or sea salt
1/4 tsp of ground black pepper
1/4 tsp of celery seed
1.75 cups of chicken broth
2/3 cups of milk
2 (nine inch) pie crusts that have not been pre-baked

Directions to prepare recipe for elderly:
Preheat the oven to a temperature of 425 degrees Fahrenheit.
While the oven is heating up, in a large-sized saucepan mix together the chicken, peas, carrots, and celery.

Next, add the water, cover the saucepan, and let the mixture boil for fifteen minutes.
Remove the mixture from the heat, drain it, and set it aside temporarily.
In a separate medium-sized saucepan over a medium heat setting, cook the onions in the butter until they have become soft and clear.

Stir in the flour, pepper, salt, and celery seed.
Combine the flour mixture and vegetable mixture into one single pan.
Taking your time, stir in milk and chicken broth, then let simmer over the medium-low heat setting until it has become thick.

Remove the mixture from heat and place it aside.
Put the chicken mixture into the pie crust on the bottom.
Pour the hot mixture of liquid over both the chicken and vegetable mixtures.
Cover it with top crust, seal off the edges, and slice away the excess pie crust dough.
Make several slits into the top for better ventilation.
Bake in the oven for thirty to thirty-five minutes or until the pastry is a golden brown color and the filling is bubbling.
Pull out from the oven and let cool for ten minutes before serving.
