Join us as we walk you through how to brew a delicious Kettle Sour!

This Kettle Sour is based on a Gose recipe, which is a light, tart wheat beer. It is extremely refreshing with its dry finish and bright flavors. Traditionally the Gose is fermented with lactobacillus, but souring in the kettle allows us to kill the lactobacillus before it comes in contact with our cold side.

Follow along with us as we walk you through our ingredients, including the malts, hops, water profile, and yeast strain. We will also show you our process, including the mashing profile, mash out, sparging, the boil, the whirlpool, knockout, the fermentation profile, and last but not least, the taste test.

Our recipe is below. I have included suggested percentages where applicable and values for a 5-gallon batch.

OG: 1.044
FG: 1.008
ABV: 4.73%

Color: 3 SRM

Grains
Rice Hulls - 8 oz
‪@bestmalz1899‬ Wheat Malt (50%) - 4 lbs
‪@bestmalz1899‬ Pilsner Malt (50%) - 4 lbs

Hops/Miscellaneous
‪@YakimaValleyHops‬ Mandarina Bavaria (6.7% AA) - 0.26 oz @ 30 minutes (5 IBUs)
‪@YakimaValleyHops‬ Mandarina Bavaria (6.7% AA) - 0.2 oz @ Flameout
Himalayan Pink Salt - 0.15 oz per 5 gallons
Cracked Coriander - 0.3 oz per 5 gallons

Bacteria
Lactobacillus Plantarum - WLP693

Yeast
California Ale Yeast - WLP001

Water
50 ppm Calcium
55 ppm Sulfate
60 ppm Chloride

Flavor Stabilization
As mentioned in the video, when adding additional sugars post-fermentation, you need to neutralize the yeast if you do not want additional fermentation. To do this, you can either filter, pasteurize, or use preservatives. I do not filter or pasteurize, so I use 1/2 tsp per gallon of Potassium Sorbate and 1/4 tsp per 6 gallons of Potassium Metabisulfite. These two additions do not kill the yeast, but they prevent them from reproducing. Add them 24 hours before cold crashing your beer.
