Why do coffee bags have degassing valves?

Roosa Jalonen, 2024 UK Barista Champion, explains why coffee bags have degassing valves. These one-way vents allow carbon dioxide (CO2) to escape without letting oxygen or moisture in.

After roasting, the built-up CO2 begins to slowly seep out, with up to 40% released within the first 24 hours. Roasted coffee beans can take anywhere between two and 12 days to reach the optimum level of CO2 and consequently bring out the best possible flavour of the coffee.

After your coffee is packaged, CO2 continues to be released. If the gases cannot escape, the bag will balloon, and possibly rupture. Most specialty coffee bags come fitted with these degassing valves. However, this is less common with low-quality coffee.
