This meal is twice as fun – once while cooking and once while eating.

For Falafel: Ingredients and Preparation:
250g dried chickpeas
2 tbsp chickpea flour
4 tbsp buckwheat flour
1/2 tsp cumin
1/2 tsp smoked paprika
A little chili
A little galangal
1-1.5 tsp baking powder
3 tsp sesame paste
Juice of half a lemon
3-4 sun-dried tomatoes
1 onion
2 garlic cloves
1 bunch of parsley, or 2 if you don't like cilantro
1 bunch of cilantro
1 tsp rock salt
A little vegetable oil for brushing
Soak the chickpeas for at least 12 hours, or 24 hours is fine. Please change the water at least once. Then drain the chickpeas and rinse with fresh water.

Preheat oven to 160°C (fan/circulating air). The falafel should bake for between 15 and 20 minutes.

Mustard Buckwheat Roux Preparation and Ingredients:
1 tbsp coconut oil
2 tbsp buckwheat flour
1/4 l water or a little more
3-4 heaped tsp mustard (medium-hot)
Rock salt
If you like, you can add a dash of chili oil at the end.
For the light roux, gently melt the coconut oil in a pot or pan. Then remove the pot/pan from the heat or turn off the heat. Sprinkle in the buckwheat flour and stir in the mustard with a wooden spoon, mixing to form a thick slurry. Now gradually add the hot water and stir everything well. Return the pot/pan to the heat and bring to a boil, stirring constantly. Add the mustard and season to taste with rock salt and spices. Let it sweat a little longer so the flour can swell. For light sauces, make sure the roux doesn't start to brown.
This roux can be used as a base for many soups and vegetable dishes, and you can add more or less liquid depending on how thick you want the buckwheat roux to be.
