Banana Nut Muffins are a favorite in our house and easy to make! Try out this recipe and see for yourself.
Dry Ingredients:
• 1.5 cups white sugar
• 3 cups AP Flour
• 2 tsp baking powder
• 2 tsp baking soda
• 1 tsp salt
• 1 tsp cinnamon or nutmeg
• 1 cup chopped walnuts
Wet Ingredients:
• 6 large VERY ripe bananas mashed
• 2 large eggs.. we use duck eggs if available
• 2/3 cup veg oil or you can sub apple sauce instead
Topping:
• 3/4 cup chopped walnuts
• 4 tbsp dark brown sugar
• 3 tbsp melted butter
1. Mix mashed bananas, eggs and sugar until well blended. I use the STIR setting on my mixer
2. Add your veg oil or apple sauce
3. Then slowly add in your dry ingredients flour, baking soda, baking powder, salt, cinnamon and 1 cup chopped walnuts
4. Mix until flour disappears and walnuts are evenly distributed. About one minute.
5. Now the topping: In a separate bowl mix ¾ cup walnuts, brown sugar and hot melted butter until well blended and walnuts coated
6. Next spoon batter into buttered muffin trays about ¾ full. You can use paper muffin cups if you prefer.
7. Then evenly spread topping over each one. I find a fork works best.
8. Finally bake in 350º preheated oven for 20-23 minutes until golden brown and a toothpick inserted comes out clean.
9. Let cool in tray for 5min then turn out onto cooling rack until cooled completely.
