Details for nerds:
This is done in vanilla Minecraft.
Each player is actually a bot with a skin that is white on the inside layer and black on the outside layer. The bots turn on/off which parts of their skins to display in the settings. They do this roughly in time with the video at about 10fps. The bots are written in node using the mineflayer library.
