For the salad:
2 heads curly endive
2 cups baby spinach
1 medium red beet} cooked
1 medium golden beet} cooked
1 medium candy beet} cooked
1 stalk celery
2 spring onions
1 tbsp of sugar
½ cup walnuts
For the dressing:
2 tbsp dijon mustard
150ml olive oil
75ml balsamic vinegar
1 tbsp brown sugar
salt/pepper (to taste)
