Discovering Pachamanca | Authentic Peruvian Cooking | Refugios Salkantay
Discover Pachamanca, a Peruvian cooking technique that dates back to the Inca empire! We take you behind the scenes of an authentic pachamanca experience so you can see the process. First, stones are heated until they are super hot. Ingredients are then nestled among the stones. Ingredients vary, but usually consist of a combination of meats and vegetables. Once the ingredients are added, grass is put on top to help retain the heat. A covering is added, followed by earth. This creates a sort of natural pressure cooking effect.
