Disclaimer: I am not a professional cook. I just decided to cook this age-old and loved Kofta Curry recipe to pass time during self-quarantine due to the CORONA VIRUS pandemic.

Description:
Chanar kofta curry is a traditional Bengali recipe. Sometimes it is cooked with onion and garlic, but my recipe does not use any garlic or onion, only ginger. It is also known as Malai kofta curry. This is actually a homemade paneer or cottage cheese recipe in Bengali. This is a completely Bengali niramish / veg recipe.
Ingredients:
Chhana (from 500ml full-fat milk),
Lemon juice/Calcium Lactate
2 boiled potatoes,
flour,
chopped cashew & raisin,
carraway seeds,
coriander powder,
turmeric powder,
red chili powder
grated ginger,
sugar,
garam masala powder,
bay leaves
Mustard oil
Process:
To make the Chhana:
For this at first boiled milk & when it is boiled properly add some lemon juice or Calcium Lactate. Stir it till cheese and water removed from each other.
Hang it in some muslin cloth and keep it hanged to remove water.
To Make the Kofta/pakora:
Add the hung, dry chana to boiled potato & mash it. Add one by one flour, salt, sugar, red chili powder. After making the dough take a small piece of dough, staffing with cashew raisin & make round balls.
Heat oil in a pan and fry kofta till it turns into brown color. After keeping aside the koftas, add caraway seeds, bay leaf, and sugar into the hot oil. When it spread aroma add mixture pest of spices. Stir it well & cook till oil separates from spices. Now put water & add salt to test & give some time to cook. Add garam masala powder mix them well & turn off the gas burner. Now spread fried kofta in a serving bowl & pour hot gravy over kofta. Cover it for five minutes & serve it with steam rice or fried rice or roti.
