This is demonstrated on a Note Air 2 using firmware 3.2 (updated as of June 2022), but it should be the same procedure on a Nova, Poke and Max tablet as well. (I don't have a color e-ink tablet, so I can't confirm how to adjust settings on those!)
For third-party handwritten NOTE-TAKING apps like OneNote, Boox has suggested settings for those here: / onenote-evernote-wps-how-to-optimize-them-... (But I consider the built-in Note app to still work much better on the Boox than any third-party note app, to be honest!)
► Are you looking into buying a Boox and in the US, UK or EU? I HIGHLY recommend doing it through Amazon if possible. It is very likely the return/replacement/repair policies will be more favorable for you than for purchases made on the Boox website directly.
