Lemon Orange Summer Cake 🍋🍊
I'm so glad I was able to make this cake before the summer ended. The recipe I kinda followed, but not really, called for lemon, orange, and vanilla extract. The lemon and orange extract did not taste good at all in this cake, it was very strong and perfumey so I covered the taste with real lemon and orange juice and the zest from them, and I omitted the vanilla ext. Also, I used part buttermilk and part whole milk. I also altered the amount of sugar added because I used raw sugar instead of granulated. Anywho, the cake was super buttery and tangy and I like that it was still a little warm, it made the flavors pop out even more!
Recipe:
2 3/4C AP Flour
1/2tsp baking soda
1 1/2tsp baking powder
1tsp salt
1 1/2c sugar
1c sugar
1tsp vanilla ext.
2tsp lemon ext.
3 large eggs
1 1/2c buttermilk
zest 2 small lemons.
Frosting:
4c powdered sugar
1c butter
1tsp lemon ext.
1tsp lemon zest
about 2tbsp milk
Cream the sugar, butter, and salt together. Gradually beat in the eggs one at a time. Mix in the ext. or juice. Mix in the dry ingredients. Slowly mix in the milk. Mix until smooth but don't overmix.
