Ingredients
1.5-2lb Black Bear Loin (sliced thin) (could also use moose, deer, goose or beef)
1 Red Onion (2tbs diced, rest chopped)
3 Peppers (chopped)
1 Zucchini (chopped)
3 Cloves of Garlic (diced)
1 Tbs Fresh Ginger (diced)
4 Tbs Soy Sauce (2tbs, 2tbs)
2 Tbs Rice Wine Vinegar
Olive Oil
Salt
Pepper
Sweet Thai Chili Sauce
Cooked Rice
Directions
1. Slice your loin meat into thin strips, removing most of the silver skin.
2. Dice 2tbs worth of red onion, add to a large plastic bag.
3. Peel and dice 1tbs worth of fresh ginger and add to the bag.
4. Dice 3 cloves of garlic and add to the bag.
5. Add your sliced meat into the bag.
6. Season with some Pepper, 2tbs soy sauce, 2tbs rice wine vinegar, 3 tbs oil. Close the bag, keeping lots of air in the bag, and mix everything up really well. Then squeeze out as much air as possible and reseal and let it marinate in the fridge for at least a couple of hours.
7. When you’re ready to cook, heat up a large and deep pan, along with a griddle to medium-high heat. Adding some oil when to heat.
8. Then add your red onion, peppers, zucchini to the pan and season with salt & pepper. Sauté the veggies for 10min, stirring often. You’re looking to get some nice colour on the veggies but still have a little bite to the texture.
9. At the same time the veggies are cooking add all the marinated bear meat to the griddle. Cook for about 5-10min, flipping a couple times. You’re looking to get some nice char marks and cook the meat through so there is no pink since this is bear meat.
10. When the meat and veggies are done, add the meat to the pan of veggies and add another 2 tbs of soy sauce and sauté for another couple of minutes.
11. Serve over a bed of white rice and a side of sweet Thai chili sauce.
