★ Muraturi Recipe ★
Carrots
Onions
Green Tomatoes (don't use ripe ones, they get mushy)
Cabbage
Celery
Cauliflower
Dill
Garlic (whole peeled cloves)
Whole Cayenne Peppers (fresh or dried)
Grape Leaves (optional)
40g Salt per liter of water (use un-refined, un-iodized salt!!)
Jars (sterilized)
***If you don't like a particular veggie above, just leave it out...except for the cabbage. The cabbage is what gives this medley it's distinct taste so always include that. I love using red cabbage because it gives the final product a pink color :)
Stir salt into water until most salt is dissolved. This creates the brine.
Chop veggies.
Fill bottom of jar with a grape leaf and dill.
Fill jars with mix of vegetables. Add a cabbage leaf on top to create a loose seal so the chopped veggies can stay submerged below the brine you will be adding next.
Pour brine over veggies, leaving about 1 inch space at the top of the jar.
***Add lid to jar loosely, make sure some of the gas bubbles can escape to prevent the jars from exploding. If you notice too much pressure in the jars, just "burp" the lids. This means loosening the lid more to allow the gas to escape.
Leave jars on kitchen counter for 1 week then move the jars to the fridge for long term storage.
Eat as a condiment. Just a few veggies with your meals is enough to give you great probiotics!
