NIGERIAN OKRA SOUP RECIPE

INGREDIENTS
1 kilo beef
½ kilo kpomo
½ kilo fresh fish, or 2 dried fish
2 tied stock fish
Salt to taste
2 seasoning cube
½ tsp rosemary leaves
1 tsp curry
1 tsp Thyme
2 tsp dried pepper or less
6 tsp ground crayfish or more
1 cup palm oil
2 cups grated okra
2 cups sliced okra
1 cup sliced pumpkin/ ugwu leaves
DIRECTIONS
1. Add beef, stock fish Salt, peppers, curry, Thyme, rosemary leaves to a pot. Allow to cook for 6 to 8 mins on low to medium heat.
2. Add kpomo, dried fish and water enough to cook the beef till soft( 20- 25 mins)
3. Remove the dried fish, add in crayfish, peppers and palm oil. Cover and allow to cook for 5 mins.
4. Add in grated and sliced okra, cook for 2 mins before adding the fish back into the soup.
5. Cook for about 2 more mins. Remove and serve.
6. Enjoy with your favorite swallow. I served mine with semolina. So delicious
NOTE.
You can use any protein of choice.
If you have already cooked protein, then total cook time is about 20mins.
