Ramen is a noodle soup with a very flavorful broth, quite popular in Japan, although it has spread throughout the world because of its deliciousness. It's usually a laborious process that takes many hours to make. But I'm bringing you my recipe for Japanese miso ramen, or MISO RAMEN, which you can make in much less time, very easily, and with readily available ingredients.

There are many types of ramen, but I'm sharing my recipe for ramen with chicken broth, miso, and soy sauce. I'll also show you how to make marinated eggs for ramen, as well as the tare sauce for marinating them and as a garnish to further enhance the flavor of the broth.

MISO RAMEN RECIPE (serves 2)

Chicken and Miso Broth

1 liter Chicken broth
2 tablespoons red miso paste
1 spring onion
80g ramen noodles
Bacon (2 slices)
Chopped chili (optional)
1/2 teaspoon sunflower oil

Tare (for marinating the egg and bacon)

50ml soy sauce
150ml water
1 teaspoon brown sugar
A splash of rice vinegar
1 tablespoon Mirin (optional)
A splash of sake (optional)
1 clove of garlic
Ground or fresh ginger (2 slices)

Side dish:

1 marinated egg
4 slices of naruto (fish cake)
Nori seaweed (optional)
Fresh chives

Tare and Marinated Egg

1. Prepare the tare by mixing the soy sauce, rice vinegar, mirin, water, sugar, the green part of a scallion, crushed garlic, and a couple of slices of fresh (or ground) ginger in a saucepan. Boil for a couple of minutes and let it cool slightly.

2. Boil an egg for exactly 6 minutes. Stop the cooking process by placing it in a bowl of ice water for a few minutes to make it easier to peel.

3. Place the peeled egg in a glass or a zip-top bag with the tare sauce. We also add the bacon slices, cut in half, and let everything marinate for a few hours (the longer, the better).

Miso Ramen Soup

4. In a pan with sunflower oil, fry the marinated bacon slices until well browned. Set aside the bacon and the flavored oil in which it was cooked.

5. In a saucepan, combine the chicken broth, miso paste, sliced ​​scallions, sliced ​​naruto (fish cake), optionally some chopped chili flakes if you want it spicy, and the cooked bacon slices. Let it simmer, covered, over medium-low heat for about 20 minutes.

6. Add the noodles to the broth and let it simmer for another 3 minutes (or according to the package directions).

7. Remove from the heat. Add a couple of tablespoons of tare (soybean marinade), the reserved bacon oil, and mix well. 8. Serve the soup, noodles, bacon, and naruto in bowls, and top each with half a poached egg, a small piece of nori seaweed, and chopped chives.
