1 tuna fish
15 curly chilies
3 red chilies
5 green chilies
cayenne pepper to taste
10 shallots
4 cloves of garlic
1 tbsp tamarind water
1/2 tsp salt
1/2 tsp sugar
1/2 tsp stock powder
1 tsp oyster sauce
a little water
2 stalks of leeks
