Halloumi Wrap Recipe (Makes 4)
1 (8.8-ounce / 250 gram) package Halloumi
1 tablespoon extra virgin olive oil
1/4 cup sweet chili sauce
1/4 cup mayonnaise
4 large flour tortillas
4 large lettuce leaves
2 small plum tomatoes, sliced
1 tablespoon chopped flat leaf parsley
1 tablespoon chopped mint leaves
Cut cheese into 8 slices, blot dry with a paper towel, then brush one side with olive oil. Place oil-side down in a hot skillet (medium heat), then brush other side with oil. Cook until golden, then flip and cook until golden on other side.
Mix sweet chili sauce and mayo. Warm a tortilla in microwave or a dry pan, then top with 2 tablespoons chili sauce, lettuce, tomatoes, 2 halloumi slices, and herbs. Fold like a burrito. Repeat with remaining ingredients to make 4 wraps.
