Mimi has quite a health story; she was pretty much left for dead as doctors anticipated her demise. (3:00)
Doctors want to help their patients, but often their hands are tied by insurance.

She grew up farm-to-table, but in her 20s she started following the “low fat” movement and became a vegetarian.
Her decline started after a series of small falls.
Her executive function was failing as well.

Parkinson’s is another disease that Mimi has had to contend with. (35:00)
Medications not only mask symptoms, but they also compete with nutrients like protein.
She was told diet doesn’t make a difference, and she kept getting sicker.
She had an “aha moment” and decided to try something different. (42:00)
A chiropractor she consulted with suggested a high-fat diet.
Her symptoms radically improved and she has titrated off her medications.
