Banana skins are being saved from the bin and put on desserts in Canary Wharf 🍌
@roerestaurant, like its sister spot @fallowrestaurant, operates with a sustainable ethos, where as little as possible is discarded. That’s why no part of a banana, which has already travelled many miles to reach the UK, gets thrown away - instead it’s turned into a banana parfait (made to look exactly like a peeled banana) with a roasted banana and banana rum ice cream, and a candied banana skin garnish. Not only is it low waste, it’s the most popular dessert on the menu.
