There is so much to learn about mezcal and tequila. You would think the spirits culture is only about drinking shots, but it can be a lot more sophisticated.
I talked with some experts to get a better idea of what to order or buy before going back home.
By the way, do you know the differences between mezcal and tequila? Well, they are two different kinds of drinks, both coming from an agave plant. the agave plants, however, vary for each. More than 28 kinds of agave are distilled today. Tequila only uses one kind of agave... the blue agave (tequilana, weber). Mezcal can be produced with a variety of agaves, thus leading to a variety of flavors.
With Protected Designation of Origin, Tequila can only be produced in the state of Jalisco and in small parts of four other states. Mezcal is made around the city of Oaxaca and, according to Protected Designation of Origin, can also officially be produced in some areas of the states of Guerrero, Michoacan, Durango, San Luis Potosi and Zacatecas.
