Waffle Falafels again prove that the waffle iron can be used for more than just waffles. These tasty pita sized falafels are easy to make and better to eat.
• 1 (can chickpeas
• 1 onion, chopped
• 1/2 cup fresh parsley
• 2 cloves garlic,
• 1 egg
• 2 teaspoons ground cumin
• 1 teaspoon ground coriander
• 1 teaspoon salt (we like pink salt, but it does not really matter
• 1 teaspoon pepper
• Less than a teaspoon cayenne
• 1 teaspoon lemon juice
• 1 teaspoon baking powder
• 1 tablespoon olive oil
• 1 cup dry bread crumbs
Directions
1. In a large bowl smash chickpeas until thick and pasty; In Food processor chop up parsley, onion and garlic until smooth. Stir into chickpeas.
2. In a small bowl combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder. Stir into chickpea mixture along with olive oil. Slowly add bread crumbs until mixture is not sticky but will hold together.
3. Heat up waffle iron fairly hot – spray with vegetable oil (Pam). (and then do it again. Place 4 scoops of falafel on Waffle Iron and squish. Go a couple minute after the turns on. Should be crispy and separate fairly easy
