Today I show you how to make some simple and health concious Apple & Carrot Oat muffins, they're tasty, filling and don't use much sugar or any butter.

280g flour (plain, self raising or diatery required option)
80g rolled oats
1/2 tsp baking powder
1/2 tsp bicarbonate of soda
1 tsp ground cinnamon (personal prefernce)
1/2 tsp ground nutmeg (personal preference)
(150g) light brown sugar (can also use castor sugar)
(150g) grated apple, this was 2 medium large Granny Smiths for me
(150g) grated carrot, This was 2-3 medium carrots for me
2 large eggs (3 medium is also fine/or vegan alternative)
1 tsp vanilla extract
120ml Milk, I used almond
120ml Oil, I used vegetable,
