A classic french omelette is something of beauty. It takes so few ingredients, and it still blows my mind every time. So here's how you make it.
Ingredients:
-3 eggs
-1 tbsp of butter
-Chopped chives to garnish
Start by cracking 3 eggs into a bowl. I like to use a flat surface to crack the eggs that way we don't get any eggshell bits in the mix.
Now whisk your eggs for 3-5 minutes to break them down a bit and incorporate some air into them.
In a medium heat pan, melt a bit of butter, then dump your eggs in. Use a rubber spatula to keep them moving. A good non-stick pan is great to have here. Keep the eggs moving until they start to thicken up a bit, then once you've reached the desired texture, carefully fold the eggs over each other and pop it into a plate seam side down.
Take a bit of cold butter and rub it on the outside of the omelette to give it a little sheen, then garnish with chives, and a pinch of flaky sea salt.
Easy. Delicious!
