Choriqueso (Chorizo Cheese) with Jimenez Sausage

1/2 lb Jimenez Chorizo Especial
1/2 yellow onion, diced
1 large Anaheim chili pepper, diced
1 fresh tomato, diced
1 lb oaxaca cheese, grated
1 TBS Tajín Seasoning
salt, pepper, garlic to taste.
