Cheap Meat - Great Results - Smoked Beef Arm Shoulder Roast
The price of meat these days is getting crazy. Increasingly, I find myself buy either cheap cuts of meat or those that are on sale. In this video, I take a beef arm shoulder roast (similar to chuck, but less expensive) and smoke it to tender, juicy perfection.
Recipe:
1) Optionally, dry brine the roast by sprinkling salt on one side and refrigerate it for 2 hours. Then salt the other side, cover with foil, and let rest in the fridge overnight. This will help the roast retain moisture.
2) Coat all sides of the roast with a brisket rub. I use a ratio of equal parts kosher salt, coarse ground black pepper, and my BBQ rub (link below).
3) Smoke at 225F (107C) until a temperature probe indicates that the temperature has stalled (usually between 160F and 170F or 71C to 77C). This should take 3-4 hours. Optionally, you can spritz the roast with beef broth every 30 minutes once the probe reads 140F (60C).
4) Wrap the roast in butcher paper, ideally coated with Wagyu tallow and return to the smoker until the probe reads between 200F and 205F (94C).
5) Wrap in a beach towel and place into a cooler for at least an hour to allow for carry over cooking. The roast will stay warm for 3 hours or more.
