Lemon-flavored pastries lovers will love these crumbly cakes with a delicate lemon glaze. They're easy to make and use readily available ingredients.
Ingredients:
Butter – 200 g
Flour – 300 g
Sugar – 160 g
Icing sugar – 100 g
Milk – 200 g
Eggs – 3
Lemon – 2
Baking powder – 5 g
Baking soda – 3 g
Salt – 6.5 g
Directions:
Whisk 200 grams of room-temperature butter and sugar. Add vanilla and eggs, and beat until smooth.
Add salt, baking soda, and baking powder to the sifted flour. Add part of the flour to the butter-egg mixture and mix by hand or with a mixer on low speed. Pour in half the milk and mix again. Add the remaining flour and milk in several additions. Mix thoroughly until the dough is smooth.
Grate 3 tablespoons of lemon zest and squeeze the juice from half a lemon. Strain and add to the dough along with the zest. Mix well.
Grease a baking pan, pour the batter into it, and bake at 180 degrees Celsius for 40-45 minutes. Check for doneness with a toothpick. After cooling, cut into portions.
Glaze. Squeeze 2 tablespoons of lemon juice and add the sifted powdered sugar, mixing well. Dissolve the powdered sugar over very low heat (or in a double boiler), stirring constantly. Add 1 tablespoon of hot water and cook, stirring constantly, until a smooth glaze forms.
Pour the glaze over the cooled cakes and let it set.
