Acorn Cheese, from the Los Pedroches Valley
We visited a well-known cheese factory in the town of Villaralto, in the Los Pedroches valley of Córdoba province. They've added an acorn-fed cheese to their product range, a unique variety they've launched after two years of research.
They use acorns from the local pastures and a two-month aging process in a controlled environment. Another of their specialties is cured sheep's milk cheese with black truffle.
