Fat Sea Monster Liver aka Ankimo - Why Would You Eat That?
Monkfish are terrifying creatures that dwell on the bottom of the ocean, but at some point somebody (who was probably blind) thought “Hey, I should eat that, and that monster’s liver sure seems particularly tasty!” Apparently that guy knew what he was talking about because Ankimo is a Japanese delicacy. Ankimo is the liver of the monkfish that has been carefully prepared by using a tweezer to remove any parasites and all the veins, soaking it in cold water for hours, marinated in sake, then steamed. It’s served sliced with scallions, daikon, and ponzu sauce, but absolutely no soy sauce.
This Japanese delicacy is pretty tame compared to things like live octopus which makes it an easier dish to swallow for foreign diners. Its popularity led to concerns of overfishing and environmental damage and some groups still encourage people to avoid eating monkfish, but the US put a plan in place to replenish the monkfish supply so now we can “enjoy” some Ankimo without feeling guilty.
