In this video, Betty demonstrates how to make a delicious and gorgeous version of Benedictine Spread. This spread may be used as a dip with chips and crackers, or as a sandwich spread on sliced bread.
BENEDICTINE SPREAD
Ingredients:
2 cucumbers, unpeeled and cut into about 6 large chunks
1 small onion, peeled and cut into quarters
8-oz. pkg. of cream cheese, softened
1/2 teaspoon lemon juice
2 tablespoons mayonnaise
1/2 to 1 teaspoon seasoned salt, as desired
Instructions:
Use a food processor to grate the cucumbers and onion. Drain and squeeze out any excess water using paper toweling. Using a mixer, beat cream cheese until smooth. Stir in vegetables, mayonnaise, lemon juice, and seasoned salt. Serve as a dip or a spread with vegetables and/or crackers. I used the spread in the video to spread pumpernickel rye sandwiches and then cut each sandwich into four dainty sandwiches. They look and taste great!
