Spinach Soup - 苋菜汤
Some days you just want to enjoy some light and nutritious soup, like this Spinach soup. The soup is flavourful but light, and the vegetable is nice and soft, which kids will like.
It's also a very forgiving recipe. The amount of ingredients and cooking time are flexible. More ikan bilis and soya beans, richer flavour. Less cooking time, lighter flavours, but still taste good. Just season according to your own liking!
P.S. you can make double the amount of soup needed, freeze the rest and use it for other dishes like soupy noodles, stock when cooking, etc.
