Shiso Collins
Gin, shiso, yuzu liqueur
Had some leftover shiso and wanted to make use of it before it went bad, so decided to make a Tom Collins riff. I saw Truffle on the Rock’s video on making batched mojitos with mint oleo saccharum and felt this would be a good application. It’s a good technique- some mint washing techinques cause the plant matter to oxidize too quickly, giving a muddy taste. But this shiso gin was super fresh.
3 oz of shiso collins mix
top with soda water
garnish: shiso, yuzu gummy
to a collins glass/ highball glass add mix, then top with soda and add garnish
Shiso mix
150 ml gin
5 g shiso leaves
35 g sugar
30 ml yuzu liqueur
75 ml 6% lemon acid (6 g citric acid : 94 g water)
Combine sugar and shiso and gently muddle, then let it sit, covered, for 2 hours. Add gin and mix to dissolve sugars. Remove the shiso, then add gin, yuzu liqueur and lemon acid to a bottle and shake to incorporate.
