*1,200 g mixed cured meats and cheeses
*700 g water
*30 g fresh yeast
*20 g salt
*3 g pepper
*80 g lard in the dough and another 50 g extra for the mold and to massage the dough
*6 hard-boiled eggs (to stuff the casatiello)
*3 egg yolks to brush the casatiello
*4 raw eggs to decorate the casatiello
*80 g of grated parmesan and pecorino mix
