Simple, comforting, and so easy to make! Our RICE WITH VEGETABLES recipe is one of those dishes that I make at least once a week.
Perfectly cooked rice, mixed veggies, a coconut milk to cook it all in, and a bit of ghee. This is just a comforting, classic dish that whole family loves.You can easily serve this Vegetable Rice as a vegetarian entree or as a side dish for chicken or fish.My kids are big fans of most rice recipes and they love the flavor of curry so this reasonably inexpensive meal goes over very well with my clan and hopefully will for yours too.The best part is, it takes only 30 minutes to cook, uses only one pot, and is a great healthy rice dish for the family.I used carrots, potato, and beans today because they all cook at the same time as the rice. You can use other veggies too as long as they do not need more than 15 mins of cooking time. I like to serve it on its own with raita or along with the main course.
