I am back with another amazing recipe for you to try. This time a 2 in 1! Today I have fresh homemade ¡Queso Fresco/Cuajada! to enjoy with you PLUS an added bonus recipe ¡Crema Salvadoreña!
Some tips I have for you are:
1. In this recipe I am using freshly milked cow's milk. However you can also use full fat whole milk for the supermarket.
2. When using fresh cow's milk, you'll see una "natilla" or thick cream starts to form on top. Scoop that out, add salt and enjoy with your frijolitos!
3. For every 1 Lt of milk, use 1/2 cup of white vinegar.
4. I did not have a cheese cloth on hand when I made this recipe, so I used a colander and then a fine mesh one. The key is to get rid of all the excess moisture.
5. When using spices, always start off by adding little quantities, tasting it and then working your way up in flavour.
6. You can eat this cheese right on the spot or refrigerate so that it firms up.
Ingredients for la Crema Salvadoreña:
2 Lts of fresh cow's milk.
Big pinch of salt.
Ingredients for el Queso Fresco/Cuajada:
2 Lts of fresh cow's milk.
1 cup of white vinegar.
Big pinch of salt.
