►Ingredients for the KFC Fried Chicken
►Chicken Prep
Whole Chicken cut into 8 pieces (1.5kg or 3.3lbs)
2 tbsp (30g) finely chopped red chili or puree
4 (35g) garlic cloves paste
3 tbsp white vinegar
1/4 cup pickle juice
1.5 tsp paprika
1.5 tsp cayenne pepper
1.5 tsp onion powder
1.5 tsp black pepper
1.5 tsp red chili flakes
1.5 tsp chicken seasoning
2.5 tsp salt
1 tsp msg
1.5 tbsp soy sauce
►For the Dredge
3 cups (360g) plain flour
2 tbsp chicken seasoning
1 tbsp cayenne pepper
2 tsp paprika
1 tsp white pepper
2 tsp black pepper
1 tsp msg
1 tbsp salt
2 tbsp oregano
►For the Wet Batter
2 cups (240g) plain flour
2 cups water
1 tsp salt
1 tsp chicken seasoning
Also, 2 cups flour in another bowl
►For Frying
1 litre or 33.8fl oz sunflower oil
►For the Sauce
1/2 cup mayonnaise
1/2 cup greek yogurt
2 fresh Jalapenos or 1/4 cup (30g) pickled
2 tbsp pickle juice
1 garlic clove
1 small lime
1/2 cup coriander
1/4 tsp cumin
1 - 2 tsp hot sauce
Salt to taste
Serve with coleslaw and fries
