►Ingredients for the Chicken Pasta Bake
►For the Sauce
1 red onion
5 garlic cloves
Fresh basil
3 sun dried tomatoes
1 tbsp black vinegar
1 kg or 2.2lbs chicken breasts, small cubes
1 tbsp tomato puree
500g or 17.6 oz tomato passata
250ml or 9oz water
2 tsp sugar
800ml (3.4 US cups or 27oz) bechamel sauce (or double/heavy cream)

400g or 14oz penne or fusilli
150g or 5oz grated mozzarella (add 100g on the top)
100g or 4oz grated cheddar (add 50g on the top)
Panko breadcrumbs (optional)
Add 1 tbsp salt in boiling water for pasta
Water should cover the pasta
►Spices
1 tsp smoked paprika
1 tsp red chili flakes
1 tsp cajun spice
1/2 tsp cumin
1 tsp cayenne pepper
1 tsp black pepper
1 tbsp oregano
2 tsp thyme
1 tsp salt
