-1 Pork loin (mine weighs 2.5 kg)
-1/2 tsp. dried thyme
-1 tbsp. marjoram
-4 cloves of crushed garlic
-2 tsp. olive oil
*For the Stuffing
-1/2 cup chopped bacon
-1/2 cup pitted prunes
-1/4 cup almonds
*For the Plum Sauce
-1 cup white wine
-1 cup pitted prunes
-2 chipotle peppers in adobo sauce.
-1/2 chopped onion.
-1 Tbsp. brown sugar.
-1 Tbsp. chicken bouillon powder.
-1 cup water.
