This is said to be named after Japanese foxes or kitsune, because of the fried tofu that is served together with the udon. It is believed that fried tofu or fried beancurd as some refer it to, is the favorite of these foxes or fox spirits. They also serve the god Inari, which is why things like Inarizushi (rice sushi inside a tofu pocket) is named as such.
