Do you have maple trees on your property? If so, now (typically mid-February to mid-March) is the time to tap them! Sugar maples are preferred since their sap has the highest sugar content, but you can also make syrup from several other trees, such as silver maple, red maple and birch trees! The hours it takes to boil the sap down to syrup is onerous but worth it when you finally get to dig in to a steaming stack of pancakes drizzled with hyper-local maple syrup.
