Sharpen your kitchen Knives with a sharpening steel. It's also called a sharpening rod, aka honing steel. Really, this tool is to maintain the knife's edge. A chef who uses knives all day may need to use a steel to align knives edges a few times a day. When you find that your knife has to be forced through a cut, it's time to fix the edge. Unless the edge is really dulled, a smooth honing rod or a steel will quickly make for a sharp edge.
Buying the correct type of sharpening rod and using the correct angle is critical for success. The wrong angle or the wrong type of sharping, honing steel could dull the edge or worse if it is used improperly.
