Recipe: Pam's Salmon Patties
1 pint home canned salmon or 1 15-oz can
1/2 cup chopped onion
2 tsp minced parsley
1/2 cup bread crumbs
1 rib celery, diced
1 large egg
1 1/2 tsp Dijon mustard
Salt and pepper to taste
Drain salmon, reserve juice, and place in a medium bowl. Flake salmon. Add remaining ingredients and mix. Add some of the reserved salmon juice if mixture is too dry. Shape into patties and fry in a little olive oil for about 4 minutes per side or until internal temperature is 165°F. Serve with lemon slices.
