Pav Bhaji Without Pav Bhaji Masala: Today we are sharing Mumbai Style Pav Bhaji Recipe with you, and we will be making Pav Bhaji Without Pav Bhaji masala. Pav Bhaji recipe originated in Mumbai; and famous across the globe. Its not only Mumbai style, but it can also be called as Pav bhaji recipe Dhaba style.

Let’s look at the ingredients

1 Cup Chickpeas soaked overnight, you need to boil and mash it well
3 - 4 medium-sized boiled & mashed potatoes
Chopped Half of capsicum, and one large carrot
1 Bowl chopped Cabbage as shown here
2 tablespoon ginger paste
2 Onions
1 Big tomato or 2 medium size Tomatoes
Mix Carrot, Capsicum, and Cabbage, and cook it in the pressure cooker for 4-5 whistles

I have taken 6-7 whistle to soften the mix as I am not using a masher if you have a masher 4-5 whites are just fine so that you can mash it
Now I am Mashing the boiled vegetables
Mix mashed potatoes and chickpeas

Sauteing:

Use 4 tablespoon oil, add chopped onion once oil is slightly warm.
I do not use mustard or cumin seeds or any whole spices in my recipe so that the flavor of the vegetables will retain

Add Ginger paste:

Cook until it turns light brown
Onions are light brown now, we will add chopped tomatoes and mix
Keep stirring the mix so that it will not stick to the bottom of the pan
Cover and cook tomatoes until turns mushy and releases oil (as shown in the video)
Add 1/2 tablespoon turmeric powder, 1 tablespoon red chili powder and 2 tablespoon coriander powder (you can also change the quantity as per your taste)
Cook the spices until the mix releases oil
Add mashed vegetables and potatoes chickpeas mix
Stir and add salt as per your taste
Check the consistency and mix little bit water, we do not want it too thick nor too thin
Let the mix boil and add 1 tablespoon garam masala
Garam masala will enhance the taste and give a nice fragrance to pav bhaji
Add some water as it is too thick
Add 1 cube of butter to enrich the taste
Bhaji is ready, garnish it with some cilantro
Now lets toast Pav- here I have taken pav or hot dogs easily available in a bakery
Pour some Butter on hot Tawa and place the pavs cut into two halves
Keep turning and toast for 2 mins.
Our delicious Pav bhaji is ready - Serve it with chopped onions and lemon
