LEFTOVER PRIME RIB SANDWICH RECIPE

Today, I will share my leftover prime rib sandwich recipe.
There are 2 versions of the sandwich – just a regular subway style and a Panini sandwich.
The holidays are now over and I have to hurry and finish the leftovers from the best prime rib recipe I shared with you over Christmas.
The ingredients in this recipe are for 8 sandwiches.
Start by melting 1 stick of butter in a large pan over medium heat. Add 3 onions chopped into medium thickness wedges; add salt to taste and covert with the lid.
Slice the left over mushrooms and if you don’t have any, just sauté a few in butter.
Check on the onions – we need them to get almost soft and mushy before adding the mushrooms.
While the onions are sautéing, slice 4 bell peppers in a half, remove the seeds and place them face down in a baking tray. Set the oven broiler in High and place the bell peppers just beneath the broiler. Close the oven and set the timer to 10 minutes.
At this point, add the sliced mushrooms to the onions, mix them well, reduce the heat to low and let it simmer uncovered.
When the 10 minutes on the bell peppers are up, take them out and let them sit for a while to cool off. Whenever you are comfortable with touching them, peel the skins and as you can see, roasting bell peppers this way, make it very easy to remove the skins.
Next, spread melted butter on the rolls or bread of your choice and start layering the prime rib, bell peppers, mushrooms and onions. And finally, top the sandwich off with cheese of your choice. I’m using American cheese.
One way to finish the sandwich is to place it on the top rack of the oven and turn the broiler to high. I would recommend keeping the oven open and keep an eye on the sandwich because it’s doing to take only 35-40 seconds to melt the cheese.
Take it out, put the top and slice it diagonally for easier consumption and less mess.
Another way to finish up your prime rib sandwich is to use the George Forman grille and make a Panini out of it. I, personally, like the Panini style better.
Deep your delicious prime rib sandwich in warm Au Jus sauce and enjoy with a side of fresh salad.
