The Cow Hitch is also known as the Lark's Head. It is just two half-hitches tied in opposite directions.
It is perhaps the least secure of any hitch as you need to apply equal strain to both ends to make sure that the knot is secure. However an extra tuck can change this insecure knot into a very secure one.
