My wife swore by her cheap, serrated knives. As she put it, "[t]hey never get dull." However, after getting my Edge Pro and practicing with eight just-above-average, serration free knives I had floating around a drawer (they were so dull, that really was not as criminal as it should sound), their edges were so good she abandoned her serrated blades, even after I sharpened them using another device. Just as important, I've been able to repeat the edges whenever I needed.
The quality of edges using an Edge Pro are not reliant solely on the Edge Pro. It just makes pro quality edges possible, and more easy to duplicate. For that reason, and to get the most from your Edge Pro, pay attention to directions and consider tips and tricks offered, including those available on line from third party sources.
As I learned more about sharpening and applied it, my edges and the appearance of my blades got better. For example, consider "blade profile." Simply put, a blade usually gets thicker the higher up from the blade cutting edge you go. Because of this, continued sharpening at a given angle may, as the blade gets thicker from removing material, result in what might better described as a hatchet edge, rather than a knife edge. As such, you may have to re-profile (thin some of the sides) your knife to get the best results from your efforts.
I have a shop with an abundance of sandpaper and polishing supplies for finishing plastics, paints, clear coats, metal and granite. I had an old belt laying around too. Because of this, I made my own aluminum plates and mount sandpaper or leather to them. The papers allow me to, inexpensively, do course work, like re-profiling, or to do polishing work. The leather, both smooth and swede, allow me to strop or use pastes, like McGuire's Mag Polish, or chromium oxide to polish blades and edges.
I strongly recommend the purchase of water stones available for use on the Edge Pro. If you've never used water stones, using them will make you a convert. Cared for, they stomp all over sandpaper and cheap stones. I started with a basic set, which included a 220, 400 and 800 "grit" stone. From there, I learned the value of more course abrasives for tackling long abused blades needing re-profiling, and finer abrasives or polishes for bringing about mirror like finishes, if only to have something to show off.
Because of the different thicknesses of plates and papers or belts, switching between them often results in different angles to the blade. For this reason, I adopted an on-line tip suggesting use of a drill bit collar. It solves any problem you, otherwise, would have maintaining a consistent angle.
The collar fits snugly on the vertical post, just under the guide rod angle locking mechanism. Once installed, set and lock the angle position like you normally would. Next, use the stone you are starting with as a feeler gauge between the bottom of the now locked in place edge guide rod and the drill stop [on the vertical shaft]. Press the collar up against the "feeler gauge" and lock it in place (I switched from an Allen screw to a thumb screw for the drill collar).
When you switch to your next plate, use it as a feeler gauge, BUT move only the upper, original Edge Pro adjustment, instead of the collar. This will compensate for the difference in thicknesses and maintain your desired angle.
Two hundred dollars was a lot of money to spend on a manual sharpener. The thought of doing so made me nervous. After buying it,I even fought off a bit of buyer's remorse. However, that dissipated with use and the resulting edges I achieved using it. My comfort was fortified by the knowledge the motorized one inch belt sharpener and low speed, water cooled, horizontal sharpener in my shop will never be the last step of acquiring a craftsman's edge remotely comparable to what I get with the Edge Pro.
