Ingredients:
60 mls extra-virgin olive oil,
100 g spicy salami, chopped
1 white onion, finely chopped
1 celery, finely chopped
1 carrot, finely chopped
Chilli flakes, QB
2 tbsp, tomato paste
Salt, QB
Freshly ground black pepper, QB
4 potatoes, peeled and cubed
1 - 1.25 litre water
300g Pasta Mista & Broken Spaghetti
125g Smoked Provola
125g Pecorino cheese, chopped
50g Parmigiano Reggiano Cheese Rind
In a pot, heat up some olive oil and spicy salami. Slightly brown the salami, then add onions, carrots, celery, and sauté together for a minute. Add chilli flakes and tomato paste and stir well. Add the cubed potatoes and mix together, then add 1/2 litre of water and the Parmigiano Reggiano Rinds. Let it cook for 10 minutes or until the potatoes get soft. In the same pot, add the mixed pasta, salt, the remaining water in the pot, and stir. Cook all together for about 12 minutes. When the pasta is cooked and the potatoes are soft and creamy, remove from the heat. The texture should be thick and creamy. Add the smoked Provola and Pecorino, and mix well. Let the dish cool down for about 5 minutes before serving.
