Bread dumplings are a specialty of southern German, Austrian, and Bohemian cuisine, and come in various variations. They are a hearty, nutritious, and, above all, inexpensive side dish that has remained popular for centuries. For me, dumplings are one of the best ways to use up stale bread in a tasty way. They're also great for freezing, so you can make them a little more once and then enjoy them for months. They pair best with beef and chanterelle goulash, roasts, and roulades.
INGREDIENTS:
Ingredients for 15 small or 8-10 large bread dumplings:
500 g bread cubes/dry bread (= approx. 9 rolls)
500 ml milk
50 g butter
1 large onion
2 tsp garlic paste or 1-2 garlic cloves
4 eggs
2 tbsp chopped herbs (parsley, chives, etc.)
Salt, pepper
